BANANA, CACAO AND COCONUT PROTEIN LOAF

WHAT:

  • 2 scoops Narcotic Nutrition Cacao/Coconut hemp protein
  • 2 cups ripe bananas (mashed)
  • 1/4 cup oil or non-dairy/dairy milk (oil works better, however a lower fat option is to use the milk of your choice)
  • 1 tbsp cacao powder
  • 3 tsp baking powder
  • 1 tbsp vinegar
  • 1/3 cup maple syrup or agave
  • 1/4 tsp stevia
  • 1 1/2 cup buckwheat flour, or any flour of your choice
  • Pinch of salt

Optional extra:

  • Sliced banana

HOW:

  • Preheat oven to 180C and grease or line a 9×5 pan
  • In a large bowl, mix together all wet ingredients until combined
  • Combine all dry ingredients in a separate bowl and mix well
  • Pour dry ingredients into wet ingredients and mix until combined
  • Transfer into greased/lined pan and spread mixture evenly
  • If desired, place sliced banana on top of the loaf
  • Bake the loaf in the oven for 40 minutes, or until the skewer comes out clean!
  • Remove from the oven and rest until it is completely cool
